I know this probably a pretty basic question, but what is rolling the fender to make a wheel fit? I know if the tire is too wide it'll hit the fender, so you have roll the fender... but are you essentially pushing up and back on the flat part at the bottom of the fender? The part that tucks into the wheel well? Anyone have a before and after shot of what actually changes when you roll the fender?

The fenders have a lip that points towards the tire.

I thought it meant to roll the car on the side so the fenders get smashed into to the tires!!
Oh well.

the lip IS there to help the fender be more rigid, rolled it looses some ridigity, but i dont think that is a big deal unless somewhen hits it... but then u need extensive body work anyway!

how much does it usually cost when someone that is going to install your tires has to roll the fender?

If you are willing to roll the fender lip yourself, under $100. The sponsor here that was renting out the roll tool has been MIA for months now. If you search on google or EBay you can find other people renting the tool out for about $60. If you want to buy the tool, it will cost about $250 and after you are done, you can sell it for about $150 to $200 to other members here. You will most likely need some touch up paint (whatever that cost, my dealer sent me a bottle after I bought my goat).
If I were you, I would be looking at 9" to 10" wide rim, either 18" or 19" wheel with +52mm offset, and get some 275 tires (9.5” is idea for 275 tire). There is about 50% chance you will not have to do anything with the setup listed above.

Your front fenders came fom the factory rolled. Run your hand on the lip of either front wheel well and you'll see :)
