I'm probably in the market for some drag tires and I'm thinking of these:

Thinking of using 275/35/18 for a size (just swapping out my rear Toyos for a few seasons).

Am I defeating the purpose of having a drag radial by going to such a low profile? I only plan on having the DRs on this spring, go back to the Proxies in the summer, then back to the DRs in the fall. Will these tires make it on the street for a few seasons? Or will they wear out too fast?

You'll be better off using a smaller wheel that has more sidewall for the track. the sidewall deforming actually helps the tire get a better contact patch.
