I found a set of 17x8.5 wheels locally and they have an offset of ET43, would this clear the front struts?

It'll be a close call - those wheels have 5mm less offset than stock (more clearance to strut), but the added width will make the tire grow a little...I've seen a rule of thumb where section width grows a maximum of 0.2" (5mm) per 1/2" of wheel width, so this cancels out your offset change. Could work, it all comes down to your alignment and tire (squared off or rounded shoulder).

You should have no problem with them touching the sturts.
I'm running 18x8's with a 45mm offset with 245/40's and have zero rubbing issues.
