Whats the biggest rear tires you can fit on a 18x8 wheel with a 40 mm offset
currently its running a 245/40/18
I'm thinking with the fenders rolled it could fit a 275/30/18 or something, just curious what others have done so far

Not recommended by the manufacturers to run 275's on an 8" wheel. If you decide to go that route 275/35/18 will fit with cutting/rolling.
Toyos and Nittos run narrower.
BFG's are the widest.
Kumhos are somewhere in between.
275's on 8" wheels can feel a bit nerving on stock suspension. After a thicker rear sway bar I was able to push the car pretty hard.
245's in a wider manufactured tire will look close in width to 275's.

I would think that BFG 255s or 265 would be a pretty good match.

done a LOT of research, and I was just wondering about the offset more than anything since most people have tried to put wider tires on stock rims.
I have a complete different suspension too, I'm going to have eibachs, lol....so thats another concern but I don't care about cutting/rolling the fenders either

IIRC 45-50mm offset for the rear is ideal.

I'm not going to buy new wheels since mine are discontinued, I'm stuck with the offset I'm running.
I might be willing to buy some staggered TSW's after the blower is in
