can you put say a 245 on the front and 245 or 265 on the stock 18 rims?

I would not recommend going bigger than a 255 on the rear. The stock 18's are 18x8, so any wider and it will start to bulge out.
Many people run 245/40/18's on all 4 corners. Beware you could have some strut rub issues on the front with a 245 or larger, mainly if your alighnment is out of whack.
The safe bet: 235/40/18 on front and 255/40/18 on rear, assuming stock suspension. Depending on the tiree, a 255 could rub if it's wider than normal.

You can offset your rims to a + offset and throw on atleast 275 in the back. I'm planning to go 275 and the least goal will be 305's so i can get all my power down

245 scares me, ive felt behind the tire and there is not much room at all, and i had my alignmnet checked twice since ive had the car. i would like to put 255/35/18 on the back, but i love flying around turns and thats a bit big for 8" rim. hmmm.

Send the stock 18's off and have the two rear ones widdened and or offset changed to accmodate wider rear tires.

If my car had its factory optioned 18's on it I would not of have bought the CCW's, but the dealer took the 18's off of mine and put 17's on it which I hated.
You can the stock rear widened for under $500, that is alot less than buying new wheels if you like the look of the stock 18's.

what's the offset and bolt pattern? I have ASA 18", 245ZR rated tires on my audi that I'd like to swap, but I don't know if the 45MM offset and 5 x 112MM pattern will work with an 04 GTO.

definitely won't....40mm offset and 5x120 is pretty common on these cars offset wise...
