Ok, First of all while BMW cars have the same bolt pattern as the GTO, the center bore is different. The bore on the BMW wheels is 72.5 and the bore on the GTO is 69.5. The BMW wheels will not be hub centricto the GTO and could cause vibrations. A17x8.5 at 40in the rear will rub, especially if the fenders have not been modified, especially if the car is lowered. If you are going to run a 275 you would be better off with a 9 or 10 inch wide wheel. While some people are crushing down a 275 to put it on the stock 17x8, it really isn't ideal. That tire on that small of a wheel is in reality barely putting down any more contact patch then the 245. An 8.5 with the CORRECT offset wheel is really best with a 245 on a GTO.

so will that fit if the outside diameter of the hub ring is 72.65? Is that close enough?

Not exactly answering your question...but 17x8's with a 40mm offset worked fine with my 245/45/17 autox tires (Falken Azenis). Looked pretty tight in the front but never any problems :)

It will certainly go over the hub. The problem is it won't fit snug and won't be hub-centric, which causes vibration issues.

Get some hub rings, problem solved.
