Ok, I will be calling zenetti to see if they can custom make a 9.5 wide wheel with an offset that will allow no rubbing and fender rolling in the back. What offset should I go with? 50, 55 mm? Not sure how high I should go. Any input would be appreciated, thanks!

I've heard that 55 is what you will need.

I'd say 55mm or even slightly higher. My 9" wheels have a 7" backspacing which calculates out to about 51mm and their is plenty of room for a 9.5" wheel assuming you run a 275 tire still.

What would be optimal for a 8.5 wheel in the front? 40, 45 mm?

38-40mm front (8.5" wide wheel) and ~55mm rear (9.5" wide wheel). Still is dependent on tire choice (and size of course), proper alignment, etc.

I plan on going with 245 up front and 275 out back. Not sure on tires, whatever has a good treadwear rating. Thanks.

I would tend to agree with this... I went with 45mm offset on the front with 8" wheels and 235 tires and their is slightly more room than stock which is what I was after.

Jason, are you running 8" all around? Or did you go with a staggered setup?
