Im keeping my front tires stock. What would be a better choice for rubber on the back with my stock 18's?

Nitto nt05 in 245/40/18
or
nitto invo's in 255/40/18

Are 255 pushing it on stock 18's? I want a wide tire without widening the wheel but i dont want any issues due to cramming a wide tire on a small rim.

Which one would i be happier with?

265...no problem at all on my stock 17's...

Will i have any problems with nitto nto5 265/35/18's? Will they actually mount those on my rims and will they fit?

Do the 265's. It is very close to the stock height 235 tire. Speedo will be the same and sidewall profile will look the same. No rubbing, no fender rolling and will look great from the rear.

some shops will mount em...some won't...

townfairtire in Derby mounted 265s on my stock 18. never had a problem

A 255 is fine on an 8" wheel. Your only problem is that as you go wider you also go taller. A 255-40-18 is too tall for the front of these cars. You would be better with a 255-35-18 over a 255-40-18.

Whats your opinion on 265's.

A 265-35-18 is the ideal size to match with a 235-40-18. A 265 is not very ideal on an 8" wheel though. That tire will "crown" in the center and the car will not utilize as much contact patch as it could/should. A 9" - 10" wheel is much more ideal for the 265.
