I have read a lot about offsets and for the life of me i have no idea what they are. It seems that they are important when choosing new wheels though. Could someone explain offsets to me. Does it affect tire size as well?

Nice link, basically the more positive the offset, the closer the wheels are to the inside of the wheel well, a smaller offset will result in the wheels sticking out more.

whats the best offsize if we get aftermarket rims? stock? (assuming you want to fit the widest possible tires on the back)

It seems the optimum offsets for a staggered set up are:

Front: +41-42mm
Rear: +52-53mm

to get that exactly, the wheels would need to be custom. Typical out there is +40 for an 18x8 in the front and +45 for an 18x9 in the rear.
There are a couple, like ROH Drift R's that come standard with a +50 in the rear.

If you go with a staggered set up with a 275 tire in the rear with only a +45 you will have to role or cut the fender lip. A 265 tire may fit depending on the car and brand of tire(some run wide others run narrow). A 275 on a +50 may fit with out role or cut, but again it seems to depend on the car and the brand of tire.
