im not really very good with wheels and tires, ive been looking for some rims, some sam 35 mm ofset 38, 32, and 40, i read in the Faq section than 48 is good, but can you go with the others above without any problems?

I'd stay 40mm on the rear or higher, up to 50mm max with that width. 45mm on an 8.5" shouldnt rub on the rear without rolling unless you've got passangers, then it might on a hard launch. 35mm may fit but you might want to roll the fenders.
Fronts, i'd say 35-40mm max to avoid strut rub issues.

I'm not sure about 8.5s on the front, but I know they would fit out back with 35-50 offset

Don't worry about width, worry about offset. While the width of the rim will slightly alter the width of the tire on the rim, it will not alter the location of the tire itself. The only part (that I have ever heard about) is the tire, not the rim. No matter how wide the rim is, the tire is staying in the same place in relation to the offset.
Now, for front, you really want to stay in the lower 40's to avoid strut rub with a 245 width tire. Of course, you can always do a 56mm like me and run a spacer, but that is only if you have no choice. In the rear, I am running 57mm offset with a 275 tire, and have very slight rubbing on the inside. This was fixed with a bfh and no more problems. Stick around 50-55mm and you are good to go.
