With a 40mm offset, they may rub slightly, depending on what tire you choose. That's the same width as stock, but 8mm further toward the fenders.
There's not 8mm of clearance between the stock tire and the unmodified fenderlip.

what would be a good tire to use

Well, Nittos generally have a smaller footprint than they're rated for. Their NT555 Extreme Performance street tire gets good reviews and last forever (300 treadwear rating). Not bad price, either, at about $130 a tire.

so those nittos will fit with the TSW wheel?

In a 245/40/18, yes - they'll fit fine. They might still rub slightly, however, under hard acceleration and/or aggressive turns.

<<< Mine work fine in the front with a 245/40. The rears are 9s with 275/35s and rear fender rolling/trimming, ect was required. The only damage you may be concerned with when rubbing is involved with an ET40 wheel in the rear is damage to the tire.

did you do the rolling yourself or can they do it at the wheel place (discount tire)?

Most franchise joints like Discount Tire are ill-equipped to handle that. You'd be better off finding a custom hot rod shop in your area, or a local with the Eastwood roller.

Good luck on that one! I searched all over in San Antonio and nodody had even heard of the tool. I ended up taking it to a hot rod shop and the guy went to work on it with a hammer. Did a really good job though. He's actually fixing my "rear ender" right now. Unless rotating tires is really important to you, I'd recommend staggering. You're gonna have to alter the fenders anyway... And it looks really cool.

That depends on how much driving you intend to do in those "couple of days."
I went less than a week with my first wheel/tire setup with it rubbing, and it scarred the tires up pretty badly. They were 8.5" wide wheels, 245/40/18 Nittos, on 35mm offset.
I would recommend putting your new wheels on, and then driving the car. Drive the hell out of it to see if it rubs. If it doesn't, great! if it does, then get the fenders rolled or cut ASAP.
